Finding a small roadside vendor in the mountains selling homemade Japanese pickled plums (umeboshi). Pickled plums are popular in Japan on rice or mixed with any number of specialty dishes. There are large, squishy umeboshi and small hard pickled plums though my favorite are any umeboshi made by the local farmers in our area. I enjoy them with every Japanese style meal! Nuke Zuke is a traditional Japanese pickles served with miso soup and steamed rice at Japanese meal. Preparing Nuka Doko is the vital process before starting to pickle vegetables in it. Today I prepared Nuka Doko mixing salt water and nuka-rice bran. It takes a few days until the Nuka Doko becomes ready.
